Cheats Truffle Butter

This is a faster, more convenient way of making Truffle Butter, than the tradition method of churning fresh milk, and separating the butter and whey. Not only is Truffle Butter delicious on warm bread, stirred though soups, mash, pasta, risottos and more, it's a great way to use any extra shavings and to extend the life of your Truffle.

Ingredients:
  • 250gmGood Quality Salted Butter
  • 10gFresh Black Truffle

Instructions:
  1. Let butter come to room temperature and cut into cubes. Place into a large mixing bowl.
  2. Chop Truffle into very fine pieces, or finely grate
  3. Add Truffle to butter and stir until evenly combined
  4. Divide the mixture in half
  5. Place one portion of butter onto greaseproof paper and roll into an even tube shape. Twisting each end to seal. Repeat until the mixture is used.
  6. Store Truffle Butter in fridge for 2-3 weeks, or freeze and use as required.

Serving suggestions:

Fold through the potato mash, and spread over warm sourdough toast,or freshly baked scones. Add to perfectly steamed or roasted winter vegetables
