​Trained to recognise the scent of truffles beneath the soil, they search the orchard and help pinpoint where truffles are waiting to be found. Once detected, each truffle is carefully assessed for firmness, depth of colour and aroma at ground level before being gently unearthed, ensuring each find is harvested at peak maturity.
